The stir-fry was fine, but the real star was the sour&spicy Thai soup. Holy moly was it delicious.

It’s the first wintery day of the year and we have freezing temps and just a bit of snow. On New Year’s Eve I like to make homemade pho broth, but on a cold day like today, the boxed broth plus rice noodles and carrots stir fried with a ton of garlic is a pretttyyy good.

One of my wife’s favorite seasonal foods, and one of mine as well, was always cranberry english muffins. We would tear through these and buy extra to freeze so we could extend the window just a little bit longer. We kept our eyes out for them all season and they never showed up and eventually she found some… colorful complaints on social media about them being discontinued without any notice. After a stressful week for her and watching a bunch of Claire Saffitz’s channel I decided to ignore my own advice and give it a shot. In my defense, her new BA free YouTube channel had a new recipe which uses a stand mixer instead of hand kneading as well as being purely griddle based instead of griddle AND bake, so there were fewer chances I’d end up in Zacny crummets territory.

All in all as a thoroughly mediocre baker, I was pleased. My first batch the bubbles were too uniform as I’m pretty sure I overproofed the first rise, but the second time around I got the texture I was looking for. Still not quite as light and airy as the real deal, but shockingly competent given my complete lack of baking skills.

Decided to try a new potato soup recipe. It’s good but I don’t know if I would call it a soup. I think because I used an extra half pound of potato it took on the consistency of mashed potatoes but I personally love mashed potatoes so having an excuse to just eat a bowl of mashed potatoes works in my favor. Probably should have used the entire US pint of half-and-half to offset the extra potato now that I think about it.

I’m firmly in the camp that putting more X in the X-soup is never a bad idea. Looks great to me.

Was really easy to make, my advice would be to saute the onion, butter, and bacon on the stove top and then transfer the leftover grease to the insta pot. I ended up transferring to the stove top because it was not looking properly cooked. Can also say it does reheat well like you would expect mashed potatoes to but the garlic had time to kind of soak in a bit more so it had a stronger garlic taste.

I think the next time I make it I might try adding something like corn to it.

Yeah, my mom (I am an eater, not a cooker) does a soup kinda like this that has ham and potato in it and she puts carrots in it. If you have a leftover parm rind, those are nice to let hang out in your soup while it cooks down and then you fish it out.

Folks, I have discovered that basil is extremely good on pizza. Someone should tell the Italians about this novel and original idea!

I made pistachio nut bread for the first time!

My grandmother’s recipe says it’s supposed to make 2 loaves but I have to wonder if she uses much smaller pans.
